Zucchini super-greens herby bread

½ zucchini grated

1 cup grated pumpkin

1/2cup grated cheddar cheese

1 cup lupin flour

1 cup buckwheat flour

2 heaped tsp baking powder

1/4tsp baking soda

Tsp dried mixed herbs

½ tsp dried garlic granules

1 handfull of shredded spinach

Cup of seeds of choice (I used flaxseed, sesame and sunflower)

1 tsp super greens powder (I use planet organic super 3)

2 eggs

¾ cup olive oil

Salt and pepper to taste

Mix flours, baking powder, baking soda and salt together

Mix eggs and oil together

Add all other ingredients in a large bowl then add flours and egg mixture

Stir to combine, then put in bread tin, top with extra sesame seeds and nutritional yeast flakes and bake for 25 min 180degrees (depending on oven)

Note: you can change flavours with fresh herbs, spices and cut out the cheese if dairy is a no-go.
