Passionfruit muffins

When the passionfruit vine just keeps giving! These muffins are great for school lunch boxes, giving those hungry kids are good source of protein, carbs and flavour.

½ cup oats (ground to flour)

½ cup lupin flour

½ cup buckwheat flour

1 scoop vanilla protein powder

2 tsp baking powder

¼ cup stevia (if not your choice then honey or agave syrup works well)

4 passionfruit pulp

¾ cup of milk of choice (almond)

¼ cup coconut or rice bran oil

½ cup dark chocolate chips

1 egg

Mix dry ingredients in a bowl. I like to use a hand whisk to incorporate all the flours. Mix the wet ingredients together. Add everything and mix thoroughly.  Spoon batter into muffin trays. Bake at 180degrees for 15-20 minutes.
