Moorish Homemade Granola

I am asked about this recipe all the time. Basically, you can add anything you like but here is my favourite ingredients.

1 cup almonds

½ cup buckwheat

1 cup hazelnuts

½ cup pecans

½ cup walnuts

½ cup flaxseed

½ cup pumpkin seeds

1 cup coconut chips

Sliced orange rind (about ½ orange)

Maple syrup

Roughly chop all the nuts. Mix all ingredients together in a bowl and pour over about 2 tbsp maple syrup. Combine well. Spread into a baking tray and bake for about 20 min on 150 degrees.  Stir occasionally. It may need longer depending on ingredients and oven.  Don’t let it burn. It just needs to be slightly toasted.

Put this granola on top of anything from salads to porridge. Keep some in the car in an airtight container to snack on.  Eat on its own with yoghurt.
