
Summer is fantastic for fresh figs and its hard to go past a tree without wanting to steal some of these amazing and versatile fruits. Figs are full of potassium, fibre, antioxidants and high in vitamins A & K. So, there is no excuse not to eat them right! Like all fruits they are high in sugar, so be careful not to overdo the sugar load with other high sugar fruits in the same day. Here is my favourite way to eat these tasty gifts of nature.
Feeds 4.
4 brown mushrooms whole
180gr organic Haloumi sliced
1 bunch of asparagus
Good handful of mixed greens (English spinach, rocket and kale)
Fresh herbs (parsley, coriander, mint, basil)
6 fresh figs sliced into wedges
1 tsp spicy Dukkah
1 handful of nuts of choice (pine nuts are nice)
Olive oil
Lemon juice and zest
Fry up the haloumi, mushrooms and asparagus in a pan with olive oil. Set aside to cool
Mix greens and chopped herbs together. Top with the haloumi, figs, mushrooms and asparagus
Sprinkle over nuts and Dukkah, squeeze lemon juice over top to taste, drizzle with olive oil and season. zest lemon rind on top.
You can add anything to this salad. It is all good.
